~ Whisky ~
THE HIGHLANDS
This is Scotland’s most vast whisky producing area, which embraces many styles. From the salty, appetising malts of the coastal distilleries to the classic inland ‘heather-honey’ flavoured malts, there is something for everyone.
       
  Dalmore Cigar Malt 40% £4.40
  Thanks to its warm, nutty and rich style this is a cracking all-rounder that will suit most pallets – You don’t need to smoke cigars for this one!    
  Edradour, 10 years old 40% £5.50
  From the smallest distillery in Scotland comes a full-bodied, rich and toffeeish malt, with hints of Christmas cake, chocolate and dried fruits.    
  Royal Lochnagar, 12 years old 40% £3.80
  A sweet, fruity and spicy malt reminiscent of rich Christmas cake, with flavours of ginger, raisins and cinnamon, and a touch of smoke. An exceptional dram to enjoy after dinner.    
       
CAMPBELTOWN
On the southerly tip of the Mull of Kintyre, just two distilleries remain, both making unique, complex and briny malts that reflect the exposed, windswept and bracing conditions on the peninsula.
       
  Springbank 10 years old 46% £3.80
  Protector and protagonists of the Campbeltown style. Springbank’s youngest is characterised by an oily texture, and hints of salt, toffee and toasted coconut.

  Longrow 10 years old    
  From the Springbank distillery, this gently peaty malt has a creamy, smooth texture, and flavours of coconut, pepper and hints of pine, and a long, warming finish.    
       
THE LOWLANDS
Lowland production has all but come to a standstill on account of the growing popularity of both Speyside and Islay malts, but this region still has much to offer with its delicately fruity, light to medium-bodied and perfumed whiskies.
       
  Glenkinchie 10 years old 43% £3.80
  Gentle Glenkinchie is known for its subtle spicy and fruity flavours. One of the few whiskies that is a good accompaniment for cheeses.    
       
  Bladnoch, Cask Strength, 15 years old 55% £5.80
  In its southerly location, Bladnoch lies closer to the distilleries of Ireland than to any other Lowlanders. Grassy, soft and herbaceous, a delightful malt.    
       
SPEYSIDE
At the heart of Malt whisky is Speyside, where despite the concentration of distilleries, there is such diversity of flavour between the rich, sherried style and the subtly delicate and complex.
       
  Cragganmore, 12 years old 40% £3.80
  This characterful Speysider boasts the most complex nose of any malt and is loved by connoisseurs. Clean and dry with barley and cut grass notes.    
  Glenfarclas, 15 years old 46% £4.40
  Well respected by connoisseurs, this family-owned distillery makes a rich, smooth malt with toasty almond and cinnamon flavours and an enduring, warm finish.    
       
ISLAY
With seven distilleries struggling to keep up with demand, Islay boasts the most pungent, smoky and powerful malts of all. Although they are an acquired taste, once you have developed it you will never look back.
       
  Caol Ila, 12 years old 43% £3.80
  This little known distillery produces complex, smoky and oily-textured malts. This one has nuances of seaweed, juniper, olives and peaty dryness.    
  Ardbeg, 10 years old 46% £4.75
  A pungently peaty and smoky malt, yet impeccably balanced with layers of gorse, seaweed, pepper and heather. A full-bodied malt with a long powerful finish.    
  Bruichladdich, 15 years old 46% £4.75
  This independently owned distillery, makes a well balanced malt which is oily textured with subtle island flavours, and a warming finish.    
       
THE ISLANDS
Malt whisky is produced on five other islands, Skye, Arran, Orkney, Mull and Jura, each with their own unique style. The selection below offers an insight into some of their characteristics.
       
  ORKNEY    
  Highland Park, Unchillfiltered, Signatory 46% £3.80
  This popular ‘all-rounder’ from Orkney has all the heather, honey and sherry notes of a good Speysider impeccably balanced with the toasty smokiness of an Islay malt. Unchillfiltered at 46% too!    
       
  MULL    
  Ledaig 43% £4.40
  From the Tobermory distillery, this soft, peaty whisky is characterised by toffee and spicy notes and faint peatiness.    
       
~ Irish Whiskey ~
Irish Whiskey differs from Scotch whisky not only by how it is spelt, but also in terms of both raw materials and distilling. It enjoys a similar level of popularity, yet few distilleries remain.
       
  Bushmills 3 Woods 40% £6.20
  Maturation in three woods, a bourbon barrel, a sherry butt and a port pipe, gives this a degree of complexity rarely attained by Irish whiskeys: apples, spicy fruit and cocoa characterise this sophisticated dram.

~ Brandy ~
       
  Armagnac – Comte de Lafite    
  Founded in 1837 by Hippolyte Papelorey, Comte de Lafite, is a classic Armagnac blended from Colombard, Folle Blanche, Saint Emilion and Baco grapes. The spirit is matured in their cellars in Condom, which are in an old Carmelite convent. Beautifully structured, with hints of prunes and violets on the 7 year old, and an almost herby earthiness on the 20 year old.

  Cognac – Frapin    
  Succeeding generations of the Frapin family have been established in the Charente area since 1270. The historic firm has its headquarters in Segonac, the capital of Grande Champagne. As owners of the largest vineyard, a staggering 620 acres, they have access to some amazing cognacs.

  Calvados – Morise    
  The house style of well matured, full bodied Calvados has gained many followers over the years. In classic tradition apples are bought on long term contracts from growers, ensuring a higher quality of fruit.

~ Port ~
  Ramos Pinto    
  Founded in 1880 by Adriano Ramos-Pinto, this Port House has always had a pioneering spirit – from its distinctive “art nouveau” advertising of the beginning of the century to the continuing wide-ranging vineyard research in the Upper Douro valley. With Champagne Louis Roederer now the major share holder, a dynamic new force will continue to push their delicious Ports forward.

~ Sherry ~
  Fino, Marismeno 16% £2.70
  Pale, dry and delicate. From Sanchez Romate, established in 1781 and still independent, appointed purveyors to the Royal Family of Spain, to The Vatican and to The House of Lords.    
  Dry, Amontillado, Los Arcos, Lustau 18.5% £2.70
  The best thing about Sherry is its versatility; This is strictly a dry sherry, and thus a nice aperitif, yet it has just enough sweetness to make it a nice digestif. Delicately fruity, with hints of ripe oranges, citrus zest and almonds.    
  Dry Oloroso, Don Nuño, Lustau 17% £2.70
  A deliciously decadent drink, full of nuances of nuts, honey, fruits and raisins. While this is not as sweet as some sherries, it is by no means dry, and should be agreeable to most palates.    
  Pedro Ximenez, San Emilio, Lustau 17% £4.00
  Forget everything you thought you knew about sherry, and think instead of the most rich, sticky dessert wine you can imagine. Don’t worry about the pronunciation, just ask for PX or the liquid Christmas pudding in a glass.
