Nigel comments “ As part of our regional menu, it was important to include a good burger, as its such a popular dish in the casual dining market. But we needed to research exactly what makes a quality burger, obviously it’s got be the best beef, and we use local Bowland rump steak, the secret to the success of our burger is the ratio of beef to beef fat, after that there are no other ingredients except seasoning with salt and pepper”
